With only two toppings, this flatbread might seem overly simple, but both the romesco sauce and the fresh goat cheese pack a flavor punch. For bite-size pieces perfect for a cocktail party, shape the dough into a rectangle, then cut the flatbread into two-bite squares.
If using homemade dough, cover the dough ball and let come to room temperature for 4–6 hours; for store-bought dough, let the dough come to room temperature for 2–3 hours.
About 30 minutes before you are ready to bake the flatbread, position a rack in the upper third of the oven, about 6 inches from the heat source, and place a pizza stone on the rack.
