Apples grow plentifully in Northern California, so it’s only natural that we are including a seasonal take on a classic of the mixologist’s repertoire, the old-fashioned. Make the apple cider syrup well in advance so it has time to chill. Once you have it ready, watch your guests line up for this well-balanced beverage.
In a saucepan over medium-low heat, simmer the cider until it is reduced to ½ cup, about 20 minutes. Add the sugar and stir until dissolved. Pour the cider syrup into a small heatproof bowl and nest the bowl in an ice bath. Let cool completely. Transfer to an airtight container and refrigerate for at least 1 hour before using or up to 1 week.
