This salad puts all the flavors of autumn in a bowl: bitter endive, peppery arugula, toasty walnuts, and crisp Asian pears. We toss this seasonal mix with a lemon vinaigrette, which lends a bright note and just the barest hint of sweetness.

Ingredients

  • 3 Asian or Bosc pears, halved, cored, and cut into ⅛-inch-thick slices
  • Juice of ½ lemon

Method

In a large bowl, combine the pears and lemon juice and toss to coat evenly to prevent the pears from browning.

Add the endive, arugula, and walnuts to the pears. Drizzle with some of the vinaigrette, season with salt and pepper, and toss to coat evenly. Taste and add more vinaigrette, salt, and pepper if needed.

Divide the salad evenly among salad plates and serve.
