This delicious vegetarian hash made with orange sweet potatoes, Yukon Gold potatoes, and an abundance of herbs and other vegetables is a riot of color and flavor. Top it with a couple of poached eggs and you have a complete meal, or serve it alongside egg-based breakfast sandwiches for a festive gathering. It’s also pretty great with panfried sausages.
