Meyer lemons are actually not even a lemon, but a cross between an orange and a lemon. They are excellent when you want the flavor of lemon but something a little milder, and they work particularly well in desserts and cocktails. You can adjust the sweetness of this classic lemon cocktail by adding more or less simple syrup.
Put 4 champagne flutes into the freezer at least 15 minutes before serving.
Combine the gin, lemon juice, and simple syrup in a cocktail shaker. Fill with ice, cover, and shake vigorously for 10 seconds until thoroughly chilled.
Double strain among the chilled flutes, dividing it evenly, then top with JCB No. 69 Brut Rosé. Garnish with the lemon twists and serve.
