Limes—and all citrus—are plentiful throughout California, especially in the winter months, their prime season. So we are always looking for delicious ways to make use of that bounty. To make this drink into lemonade, simply switch out the lime juice for an equal amount of lemon juice—or try half lemon and half lime.
In a saucepan, combine the tap water, sugar, and ginger and bring to a boil over medium-high heat, stirring to dissolve the sugar. Remove from the heat, cover, and set aside for 10 minutes.
Strain the ginger mixture through a fine-mesh sieve into a large glass jar or pitcher. Add the lime juice, stir well, cover, and refrigerate until well chilled, at least 1 hour or up to overnight.
