This tart is worth making simply for the appealing fragrance that will fill your home while you poach the pears. The tender pears are then bathed in brandy-spiked custard and topped with toasted almonds and a crunchy sprinkle of sugar. Serve the wedges plain or dress them up with crème anglaise or softly whipped cream (to which you could add a splash of brandy).
