Scatter a crown of these noble crumbs over any baked vegetable dish and put in the oven for a final crisping. Or just serve as a separate bowl with a simple meal of roast meats or game, and invite each guest to add breadcrumbs and sauce.

Ingredients

  • 2 tbsp butter
  • 1 garlic clove, crushed
  • 1 cup fresh white breadcrumbs
  • 1 tsp very finely chopped parsley
  • sea salt and freshly ground black pepper

Method

Melt butter in pan until foaming. Reduce heat to low, and add the crumbs gradually, stirring with a wire whisk until crumbs have absorbed the butter and turned golden and crisp. Add parsley, salt and pepper, and serve.
