Use this as a guideline and experiment with different types and amounts of chiles to create your own signature blend. The other spice amounts may be adjusted as well.

Ingredients

  • 2 dried cayenne chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 2 dried Anaheim chiles, stemmed and seed

Method

Cut the chiles into small pieces and place in a blender or spice mill. Add the cumin seeds, paprika, and oregano and grind into a fine powder. Store in an airtight container in a cool, dry place.
