Peanut Butter and Coconut Milk blend harmoniously with ginger, lime juice, and chiles in a sublime soup made substantial with tofu and rice. A fragrant jasmine or basmati would complement the delightful flavor and aroma of this soup. Kecap manis, a sweet, thick soy sauce, is available at Asian markets. (If you’re gluten-sensitive, check the label to be sure it’s gluten-free.) For a mild soup, omit the chiles. For a spicier soup, add some sriracha sauce when ready to serve.
