The old-fashioned vegetable side dish is transformed into a meal with the addition of brown rice and tomatoes. Instead of the usual lima beans, you may substitute edamame for a fresh update.
Heat the oil in a large skillet or saucepan over medium heat. Add the scallions, bell pepper, and rice. Cook, stirring, for 1 minute. Add the broth and bring to a boil. Reduce the heat to a simmer and season to taste with salt and pepper. Cover and cook for 20 minutes.
Stir in the lima beans and cook, covered, until the rice and limas are just tender 10 to 15 m
