This recipe is great over cooked rice or quinoa, so if you have some on hand, dinner can be ready in minutes. Or, instead of serving over a grain, you may spoon the beans into a warm flour or corn tortilla before adding the toppings. For an even quicker version of this dish, simply combine a jar of prepared salsa with the canned pinto beans in a saucepan, stir over medium heat until heated through, and serve. For a soy-free option, use soy-free vegan sour cream.
