Colorful and satisfying, this flavorful pilaf is equally good served hot, cold, or at room temperature.

Ingredients

  • 1 tablespoon olive oil or ¼ cup water
  • 4 garlic cloves

Method

  1. Heat the oil or water in a large saucepan over medium heat. Add the garlic, carrot, scallions, marjoram, and red pepper flakes. Sauté for 3 minutes, stirring frequently. Stir in the edamame, chickpeas, tomatoes, and ½ cup of the broth. Cook for 15 minutes.
