Everyone’s favorite, mac and cheese, has been retooled into a one-dish meal that includes beans, nuts, and vegetables along with the creamy pasta. To make this gluten-free and soy-free, use gluten-free pasta and replace the Worcestershire sauce with coconut aminos.

Ingredients

  • 8 to 12 ounces uncooked elbow macaroni or other bite-size pasta
  • 3 cups small broccoli or cauliflower florets or chopp

Method

  1. Cook the pasta in a large pot of boiling salted water until just tender. About 5 minutes before the pasta is done cooking, add the broccoli. Drain the cooked pasta and broccoli well and return to the pot. Set aside.
