Noodle stir-fries are common to virtually all Asian cuisines; there’s the lo mein of China, Thailand’s pad Thai, the soba noodles of Japan, and Indonesia’s bami goreng, to name a few. This recipe can be made with buckwheat soba noodles, rice noodles, or even linguine or spaghetti. To make this gluten-free, use gluten-free noodles.
