Ingredients

  • 3 medium-size Yukon gold potatoes, peeled or scrubbed, cut into ½-inch dice
  • 1 small red onion, chopped
  • 2 medium-size zucchini

Method

  1. Preheat the oven to 425°F. Lightly oil two large baking pans.
