Biryani, a classic dish of northern India, usually includes a variety of spices, vegetables, dried fruits, nuts, and basmati rice. It is traditionally baked as a layered casserole and makes a festive one-dish meal. Serve this fragrant dish with warmed naan and a spicy-sweet chutney. For soy-free, use a soy-free vegan yogurt. Note: If you don’t have an ovenproof skillet, use a regular skillet on top of the stove and then transfer the biryani to a baking dish to bake.
