Ingredients

  • 2 small Yukon gold potatoes, peeled and cut into ½-inch dice
  • 1 head cauliflower, cored and cut into 1-inch pieces
  • Olive oil

Method

  1. Preheat the oven to 425°F.
  2. Arrange the potatoes and cauliflower in a single layer on two large baking sheets. Drizzle with a little olive oil or spray with nonstick cooking spray and season to taste with salt and pepper.
