This hearty and flavorful dish assembles easily and is ideal for preparing ahead of time and then baking when needed. If you assemble ahead and refrigerate it, either bring it to room temperature before baking or bake for a few minutes longer to be sure it is hot in the center. For an even heartier dish, add some chopped vegan sausage to the mushroom and spinach mixture (it won’t be gluten-free in that case).
