Fettuccine has such a wonderful chewy texture, especially when the pasta is fresh. Lucky for us, fresh pasta is easy to find these days in the refrigerated and frozen foods section of most well-stocked groceries and almost any Italian-foods store. I love to pair it with silky things like butter and scallops and, as in this dish, a touch of lime.
