The term paillard is just shorthand (well, and French) for boneless, skinless chicken breast. Perfectly sautéed and juicy, these chicken breasts are greatly enhanced by the addition of crispy green zucchini pancakes and a freshly sautéed cherry tomato pan sauce enriched with just a touch of butter.
