Cauliflower makes one of the most delicious soups. And it’s packed with vitamin C and dietary fiber, so it’s not only great tasting but good for you too. Rich and creamy with just enough Cheddar cheese to make it seem decadent, this is the stuff that comforts and soothes at the end of a hard day.

  • 3 Tbsp unsalted butter
  • 2 slices rye bread, cut into cubes
  • 1 leek, white part only,

Method

  1. Heat a 12-in [30.5-cm] skillet over medium-high heat, and melt 1 Tbsp of the butter. Add the bread cubes and cook until browned and crispy, about 4 minutes. Transfer the croutons to a plate.
