When the kids were young, our family used to order General Tso’s chicken from our local Chinese takeout. The chicken part wasn’t always great, but I loved the sauce, which is delicious, by the way, with crunchy bok choy.

  • 2 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 Tbs

Method

  1. To make the sauce: In a small bowl, stir together the soy sauce, rice vinegar, sugar, hoisin, mirin, chile-garlic sauce, cornstarch, sesame oil, water, and a few grinds of black pepper. Set aside.
  2. Put the flour in a shallow bowl. Dredge the tofu in the flour and shake off the excess.
