Okay, I know. A baked sweet potato for dinner isn’t really dinner. But when you add black beans, along with spinach and sweet-tart grape tomatoes, it becomes a meal. If you haven’t had a baked sweet potato in a while, you might have forgotten how good it can taste. Trust me, you’ll remember quickly.

Ingredients

  • 2 large sweet potatoes
  • 2 Tbsp olive oil
  • 2 green onions, white and green parts, thi

Method

  1. Preheat the oven to 375°F [190°C].
  2. Rub the sweet potatoes with 1 Tbsp of the olive oil. Poke the potatoes with a fork in a few places so that steam can escape.
  3. Heat a 12-in [30.5 cm] oven-safe skillet over medium-high heat. When the skillet i
