Spiced Green Lentils with Sweet Potato and Pistachios

These pretty green lentils are often called lentilles du Puy, or French lentils. They cook pretty much the same way as everyday brown lentils and even the more exotic black beluga lentils, so you can substitute with any variety you like. I love how this dish fills me up and how the sweet potato is like a little dessert in the middle of dinner.
