This is almost like a puréed gazpacho. It’s a lovely soup for a hot summer day when you’ve got the whole family to feed. Just some good bread and this soup will do for lunch. This recipe gives you good quantity and keeps very well chilled. If the tomatoes are not quite as ripe as you would like, adding 2 teaspoons of caster sugar to the tomatoes will add a little sweetness to the flavour.
