This is a dish that has few ingredients but many flavours. Leeks themselves hold many tastes, giving different strengths from the white to the green. If thin pencil leeks cannot be found, then simply buy standard leeks and split them lengthways. The crispy pastry base has a good texture, and sitting the warm poached egg on top and tasting the yolk mix with all the other flavours is sensational. On top of all that, it’s also a wonderful vegetarian starter or main course dish.
