This is a great quick snack dish that also holds well as a starter or canapé. The quantities of garlic and ginger may seem a lot for just a 3-egg omelette, but mixed together and cooked they do balance the strength of both flavours.

Ingredients

  • 3 eggs, beaten
  • ½ teaspoon chopped red chilli
  • A knob of

Method

Heat a frying-pan and add the butter. Crush the garlic and ginger together to a paste. Once the butter is bubbling, add the garlic and ginger paste, the chopped onion, chilli, turmeric and tomato. Cook for a few minutes until lightly softened. Add the beaten eggs and stir over the heat until the eggs have softly scrambled. Taste and season with salt and pepper if necessary and stir in the chopp
