Chick peas are a dried pulse that, once soaked to become tender, are eaten raw or cooked. They are used in many national dishes: falafel from Israel and hummus from the Middle East are two classics.
This recipe is similar to a falafel. It’s basically seasoned and flavoured minced chick peas that are then rolled or moulded before being deep-fried until golden and crispy. Chick peas are also often part of couscous dishes, so to go with this dish I am serving a parsley couscous relish.
