Sea trout is not the easiest offish to get hold of but do try it if you can; the flavour and texture is so good. If you can’t get hold of it, then just replace it with salmon, red mullet, halibut, bass or cod - just about any fish will work. If you’re choosing cod, leave the skin on and crisp it under the grill - it’s delicious.
