You’ll also notice this recipe is for four people but in the ingredients the chicken breasts are listed as 4-6. This is basically because you need a little extra whenever chicken breasts are diced and used in a stew or curry. As you can see, this dish is simple and easy to make, and all you need now is a good rice dish to go with it!

So pleased to find this recipe again. It used to be my go-to curry. Using evaporated milk sounds a bit odd but it delivers a rich, creamy curry. The spices are just right.
