This recipe is so called because the spice mixture used to season the meat leaves it with a black finish with plenty of spice flavours. The same spice recipe can be used on fish. Once made, the spices can be kept in an airtight jar for use another day.

Try the chicken dish with different combinations of flavours. It goes very well with Simple Salad, especially during the summer when the chicken has been cooked on an open barbecue. It also eats well
