Saltimbocca is an Italian dish using a veal escalope that has been wrapped in Parma ham with sage leaves. Well, this is exactly what I’m doing using an escalope of turkey breast instead. An escalope is actually just a slice of meat or fish. When using meat, depending on which cut and variety, you may find that it will need to be slightly batted out between pieces of clingfilm. This will give you a thin slice that will cook quite quickly when pan-fried.
