Eating offal isn’t everyone’s favourite, but liver and kidneys seem to be on every household menu at some point. Kidneys can make a very quick and easy dish, just diced and sautéed in hot fat with mustard, or served with a paella-style rice dish with peas, peppers and mushrooms.

A classic chasseur is normally made with onions or shallots, mushrooms, tomatoes, tarragon and parsley in a white wine sauce. This one can be just that, but I thought about having the garnish ‘dry’: roasted
