Sun-dried tomatoes give a rich finish to this dish. The tomatoes are literally left out to dry in the sun. This dries out all the juices in the tomato flesh, concentrating the flavour. I only use a tablespoon to help flavour this dish along with the tomato stock and fresh diced tomato flesh.
