This dish will probably create a few raised eyebrows. After all, I’ve always stated that risotto can only be made with Arborio rice, and I still believe that.

It’s unusual for me to use a cookery term that doesn’t really apply. That’s normally something that irritates me. So many chefs will put a navarin of lamb (a classic braised lamb dish) on the menu and when you receive the dish you find it’s lamb fillet medallions with turned baby vegetables. A nice well presented dish but cert
