This is a great vegetarian dish that can be served with equal success as a starter or main course. The recipe came to me from a chef in New York. His name is Jean-Georges Vongerichten, probably the most famous chef in the United States. I’ve eaten his food many times (he has restaurants in New York and London) and each time I get a new inspiration.
This is basically savoury pancakes that are layered with a mushroom stuffing, a duxelle. Wild mushrooms can also be used in the filling
