The best tomatoes to use for this recipe are plum tomatoes. These have a much better taste and hold up better when cooked. If you are using salad tomatoes, only cook for 5-6 minutes. This dish eats well as a vegetable or vegetarian main course finished with chopped black olives, capers and Mozzarella or Parmesan (almost pizza-like) browned under the grill. They also eat very well with grilled fish or meat, in particular, lamb.
