Good, firm broccoli is a very attractive and tasty vegetable. Broccoli comes in various sizes and varieties. My favourite is calabrese. This is the broccoli that grows in individual florets with a thick stalk. These really keep their colour and are very tender to eat, needing very little cooking. There is also the purple sprouting broccoli, which I believe was the first to grow. These also cook very tender but never quite keep that rich purple colour.
