The ingredients in the salad itself are really very simple. The Thai flavours are given to us from the dressing which uses chillies, peanut oil, oyster sauce and the kaffir lime leaves. The dressing can be served either warm or cold. However, I find that all the flavours really liven up when served warm. The dish eats very well as a side salad or as a starter.

Kaffir lime leaves are dark green in colour and have a shiny finish. These can be bought fresh or dried from Indian shops. I
