In each book I like to include a frangipane or bakewell tart, so this one is not missing out. Instead of being a round flan I’m using a rectangular ‘ring’ 20 × 10 × 4 cm (8×4× 1½ in), but if you can’t find one use a 20 cm (8 in) flan ring.
