Greengage is a fruit we just don’t see enough of. The greengage is a member of the plum family and probably more sweet and perfumed than basic plums. With this recipe they can be used completely raw, if very ripe. If the only ones you can find are under-ripe and firm, then it’s best to soften them through in the oven with icing sugar before using – I’ll explain this in the recipe.
