Here’s also another recipe for a sponge base without any flour. Instead it’s got chocolate!

Ingredients

  • 100 g (4 oz) good quality plain chocolate
  • 2 tablespoons coffee granules

Method

Pre-heat the oven to 180°C/350°F/gas 4.

Melt the chocolate with the coffee and then leave to cool. Beat the egg yolks, then add the sugar and beat until the mixture is pale and trails off the whisk in ribbons. Stir in the chocolate mix. Beat the egg whites and salt until they h
