This is a really fun ice-cream to make. I simply add a selection of glacé fruits, raisins, cherries and angelica to the vanilla ice-cream, keeping in the vanilla for extra flavour.

You can buy a mixed tub of glacé fruits, or buy them loose to choose your own. This really isn’t over important, although I’m amazed at the variety of fruits that can be bought crystallized; strawberries, melon, plums, damsons, greengages are just a few examples.
