These biscuits eat very well with ice-creams. They are also very quick and easy to make. The mix is basically a meringue mix with the addition of flour, butter and hazelnuts. Once the biscuits have been piped on to the silicone paper, chopped hazelnuts or raisins/currants can be sprinkled on before cooking. Also, finely grated orange zest can be added to the mix before piping to give another flavour. All of these are optional extras, so here’s the basic recipe.
