This must be one of the easiest stocks to make - it doesn’t even have any cooking time! I use this recipe for a vegetarian tomato and spinach risotto. The tomato stock on its own is very strong due to the acidity of the tomatoes. I normally mix half tomato with half vegetable stock to gives you a good balance between the two.
