This is a really quick and easy dressing to make. I use this recipe for salad dressings and also sometimes to add to the Sweet Pepper and Chilli Relish. It’s also a great dressing to mix with warm pasta as a vegetarian dish or to serve with grilled fish or meat. You will get the best flavour if you use half extra virgin olive oil and the other half a cheaper oil.
