Mangosteen Tears

• 24 mangosteens
• 2 litres liquid nitrogen

Peel the mangosteens. Wearing appropriate protective eyewear and gloves, pour 1 litre of the liquid nitrogen into an insulated bowl or a small styrofoam container. Add 4 whole mangosteens at a time to the liquid nitrogen for 30 seconds. Remove with a slotted spoon
