  • 24 mangosteens
  • 2 litres liquid nitrogen

Peel the mangosteens. Wearing appropriate protective eyewear and gloves, pour 1 litre of the liquid nitrogen into an insulated bowl or a small styrofoam container. Add 4 whole mangosteens at a time to the liquid nitrogen for 30 seconds. Remove with a slotted spoon to a sealed container and place in the freezer. Process all the mangosteens this way then leave in the freezer for 3 hours.

After 3 hours set up the remaining liquid nitrogen following the safety protocols above. Using a fine microplane, grate the frozen mangosteens, one at a time, into the liquid nitrogen. Avoid grating the large segment that contains the seed. After you have grated 3 of the mangosteens, stop and stir the gratings with a fine slotted spoon then remove to a sealed container and place in the freezer. Continue until all the mangosteens are processed.
