After 3 hours set up the remaining liquid nitrogen following the safety protocols above. Using a fine microplane, grate the frozen mangosteens, one at a time, into the liquid nitrogen. Avoid grating the large segment that contains the seed. After you have grated 3 of the mangosteens, stop and stir the gratings with a fine slotted spoon then remove to a sealed container and place in the freezer. Continue until all the mangosteens are processed.
