This delightful snack makes a popular treat, both here and abroad. Ma Ho is an interesting contrast in both color and texture between the fruit segments and pork/peanut mixture topped with the chillies and coriander or mint.

Remove the pith and white fibers from the tangerine segments. Cut each down the back, as if deveining a shrimp, splitting it so it opens into a connected circle. Lay the tangerine circles on a platter.
In a wok, heat the oil and fry the garlic and shallots until light brown. Add the pork, salt, pepper and sugar and stir-fry until the pork is cooked through (about 4 to 5 minutes).
