  • 1 small cucumber, unpeeled
  • 30 ml (1 fl oz) fish sauce
  • 5 g ( oz) caster (superfine) sugar

Method

Using an 8 mm ( inch) diameter melon baller, scoop out 28 small balls of cucumber. Place in a bowl with the fish sauce and sugar and mix well. Place in a vacuum pouch and vacuum-pack on 100 per cent for 30 seconds in a chamber vacuum sealer*. Leave to marinate for 1 hour.
